[Presenter]: Hello everyone! How are you? Thanks for stopping by our channel Sazón y Corazón. Today we bring you a wonderful recipe. We’re going to prepare “Arroz con pollo.”

[Chef]: Hello everyone! How are you? Today we are going to prepare a traditional dish from Peruvian cuisine! We are going to prepare “Arroz con pollo.” It is said that this dish was born from the inventiveness of our Peruvian great grandmothers, who wanted to keep cooking their traditional “Arroz con Pato”, dish today’s recipe is based on, but faced some difficulties in its preparation after migrating from the North of Perú to the city of Lima, city located in the central west coast of Perú. Duck is the most important ingredient for preparing the original “Arroz con pato”, it’s is very abundant in the North of Peru, but it used to be very difficult to get it in Lima city, and the price was way too expensive. But that didn’t stop our great-grandmothers from preparing this delicious dish in their new homes. «Well, why not using chicken instead?» they said. And that’s how now we have this version of our tradicional “Arroz con Pato”, a delicious “Arroz con Pollo”. It’s part of our heritage, perfect for special family dinners, and currently, also part of our weekly menu. Let´s go with the ingredients.

6 pieces of chicken. Here I have thigh and legs, because they are the juiciest pieces, but you can use chicken breasts as well. 1 k rice 1 cup blended fresh coriander. If yours turns out a little bit too liquid, use 1 ½ cup. 1 cup tender corn kernels. 1 cup fresh peas. 1 cup diced carrot. 1 medium julienned red bell pepper. 1 cup minced onion. 1 tablespoon minced garlic. 2 tablespoons Peruvian yellow hot pepper paste. 1 slice “zapallito loche”, a native Peruvian squash. ½ teaspoon cumin. ½ teaspoon pepper. 1 cup black beer. Vegetal oil and salt to taste.

Let’s start cooking! We are going to start adding a little bit of vegetable oil in a pot and seal the chicken pieces. Once the oil is hot, add the pieces. We are going to seal them for 2 minutes per side at medium heat. Now, add the pieces into the pot Put the pieces with the skin down. And once they are browned, flip them.

Once the chicken is sealed, we are going to start making the seasoning with the same oil we used to seal the pieces. Start adding the onions. Stir slowly until the onion turns translucent and begins to brown slightly. I’m going to add a little bit of oil. Do it slowly, this step takes some time. It has to be this way. Add the garlic, and the cumin. Continue stirring slowly, very slowly. Fry very, very well. Once it’s slightly golden we are going to add the Peruvian yellow hot pepper paste. Continue stirring slowly. Our seasoning has turned slightly golden, Now it’s time to add the “pasta de ají amarillo” (yellow hot pepper paste). Two tablespoons. And continue frying slowly. If you don’t have “pasta de ají amarillo” (yellow hot pepper paste), you can use “pasta de ají mirasol” (dried yellow hot pepper paste) instead, the result is going to be very delicious as well. (Both are Peruvian ingredients.) Once the yellow hot pepper paste is fried, add finely grated “zapatillo loche” (a native Peruvian squash). And continue frying slowly. The yellow hot pepper paste and “zapallito loche” are very-well fried at this point, now it’s time to add the blended coriander. The coriander is going to take some time to cook as well, so we are going to keep stirring slowly. The coriander is already fried, now add the julienned red bell pepper and salt to taste. Be careful with salt right now, because we are going to taste again within 10 minutes while the chicken is cooking. We are going to taste it again, so don’t hurry up, even if the salt is perfect at this point. Now put the chicken pieces in the pot. Be careful, place them gently, they have to stay intact because they are going to cook for a long time. Don’t speed up the cooking. This must cook slowly so the pieces don’t fall apart. They have to stay intact and whole. This is important for the appearance of the dish as well. We are going to add the juices that the sealed chicken pieces have released. And now it’s time to add the beer. Just ½ cup, for now. We are going to add the other ½ cup later. Okay, it’s time to add the bear. Turn up the heat. I lowered it for placing the pieces. Now add the beer. Look, this way. What fragrance! The flavor! Let cook for a moment before adding the water. Arrange them well. Look, it’s starting to boil. The alcohol evaporates quickly because this beer is low in alcohol. Now add water. Until it covers the chicken pieces. This way. Now cover and simmer for 25 minutes, this time is going to be enough
