– 4 tablespoons of sesame oil

– 50 ml of water
– 3 tablespoons of fresh coconut paste
– Some jaggery for a touch of sweetness

**Step 1:** Heat 4 tablespoons of sesame oil in a pan. Add 1 teaspoon of mustard seed, 3/4 teaspoon of fenugreek seed, and a handful of curry leaves. Let them splutter and release their flavors.
**Step 2:** Add 30 to 35 fried garlic cloves and sauté them for approximately 3 minutes until they are fragrant and golden brown.
**Step 3:** Add 1 big-sized finely chopped onion and 2 finely chopped red tomatoes to the pan. Stir them well and let them cook until they turn soft.
**Step 4:** Season the mixture with salt to taste, 1/4 teaspoon of turmeric powder, 1 and 1/2 teaspoon of chili powder, and 2 teaspoons of dhaniya powder. Mix well until the spices are evenly distributed.
**Step 5:** Cook the mixture on a very low flame for 5 minutes to allow the flavors to meld together.
**Step 6:** Add 5 tablespoons of tamarind water and 50 ml of water to the pan. Stir the mixture well and let it simmer for another 5 minutes.
**Step 7:** Stir in 3 tablespoons of fresh coconut paste for a creamy texture and add some jaggery to balance the flavors. Mix well to combine.
